1. Combine the first 4 ingredients in a small bowl, mix well and set aside.
2. Add the olive oil to a large skillet and heat over medium-high heat.
3. Add the chicken strips, bell peppers and onion and stir fry until the chicken is cooked through, which takes about 8 minutes.
4. Brush both sides of the sandwich buns with the mustard mixture.
5. Layer 1 Romaine leaf, 1 slice of Swiss cheese onto the bottom bun and top with a large helping of the chicken mixture.
6. Top with the other half bun and serve immediately.
