Creamy Chicken and Brie Soup with Sweet Onion and Red Pepper

Sautéed chopped sweet onion, chopped red bell pepper, and coarse salt combined in stockpot with minced garlic, raw spinach leaves, unsalted butter, and all-purpose flour. Whole milk, chicken stock, and cooked and shredded chicken breast are added to the spinach mixture and soup is brought to gentle boil. Small pieces of brie cheese and half-and-half are stirred in and the soup is simmered over low heat to meld flavors. Served hot.

Ingredients -
2 tablespoons Olive Oil
1/2 Sweet Onion, chopped
1/2 Red Bell Pepper, chopped
1 pinch Coarse Salt
3 cups Raw Spinach Leaves, coarsely chopped
2 Garlic Cloves, minced
2 tablespoons Unsalted Butter
2 tablespoons All-Purpose Flour
2 Boneless, Skinless Chicken Breasts, cooked and shredded
2-1/2 cups Chicken Stock
2 cups Whole Milk
1/2 cup Half-and-Half
8 ounces Brie Cheese, torn or chopped into small pieces
 
Preparation:

1. Add the olive oil to a large pot and heat over medium heat.

2. Add the peppers, onions and salt and sauté for 6 to 8 minutes or until soft.

3. Add the garlic and spinach and stir to combine.

4. Add the butter and melt, then whisk in the flour until all ingredients are combined.

5. Stir in the milk, stock and chicken and bring to a simmer.

6. Add the brie and stir continually until it melts, which takes about 5 minutes.

7. Add the half and half and increase the heat and bring to a boil.

8. Bring the mixture to a boil and constantly stir so that the cheese does not stick.

9. Turn the heat down and simmer for 25 to 30 minutes, stirring occasionally.

10. Serve hot.
