Southwest White Chicken Chili

Boneless, skinless chicken breast pieces sautéed in olive oil with chile powder, ground cumin, and chopped onion. Chopped green bell pepper, water, corn, white kidney beans and condensed cream of chicken soup are stirred in and soup is brought to a gentle boil. Individual servings garnished with shredded cheddar cheese.

Ingredients -
1 tablespoon Vegetable Oil
4 Boneless, Skinless Chicken Breast Halves, cut into cubes
4 teaspoons Chile Powder
2 teaspoons Ground Cumin
1 White or Yellow Onion, chopped
1 Green Bell Pepper, chopped
3/4 cup Water
2 (15 ounces each) Cannellini Beans, rinsed, drained
2 tablespoons Shredded Cheddar Cheese
1-1/2 cups Frozen Whole Kernel Corn
1 (10-3/4 ounces) can Condensed Cream of Chicken Soup
 
Preparation:

1. Add the oil to a saucepan over medium-high heat and add the next 4 ingredients and sauté until tender.

2. Add the bell pepper, water, corn, cream of chicken soup, and white kidney beans in saucepan and bring the mixture to a boil.

3. Cover, lower the heat and sauté for another 5 minutes.

4. Sprinkle with shredded cheddar and serve.
