Stewed Chicken with Andouille Sausage and Baby Okra

Andouille sausage link pieces and chicken breast pieces browned in hot oil. All-purpose flour, potato pieces, low-sodium chicken broth are added and stew is simmered to soften potato pieces. Okra stirred in heated through. Lime juice stirred in and stew is served hot, garnished with chopped fresh cilantro or parsley.

Ingredients -

1 Andouille Sausage Link, chopped
1-3/4 cups Low Sodium Chicken Broth
1 (10 ounces) package Frozen Whole Baby Okra, thawed
1/4 cup Chopped Fresh Cilantro or Parsley
Juice of 1 Fresh Lime
3 Potatoes, cut into pieces
1 tablespoon All-Purpose Flour
1 tablespoon Vegetable Oil
3 Boneless, Skinless Chicken Breasts
Coarse Salt

 
Preparation:

1. Cut the chicken breasts into 4 pieces.

2. Sprinkle both sides with 1 teaspoon of salt.

3. Add the vegetable oil to a large skillet and heat over medium-high heat.

4. Add the sausage and cook for 1 minute, stirring occasionally.

5. Add the chicken pieces and brown on both sides, which takes about 10 minutes.

6. Sprinkle the flour over the top of the chicken and cook for 1 minute, stirring constantly.

7. Add the potatoes and broth and bring the mixture to a boil.

8. Lower the heat and simmer for 10 minutes, or until the potatoes are fork tender.

9. Add the okra, cover and cook for 10 more minutes.

10. Remove the pan from the heat, add the lime juice and fresh parsley and toss to combine.

11. Serve with crusty bread.
