Asian-Style Chicken with Bell Pepper and Garlic

Thinly sliced boneless chicken breast pieces stir-fried with minced garlic, green and red bell pepper strips, sliced onion, and tossed in sauce prepared from reduced-sodium chicken broth, soy sauce, cornstarch, coarse salt, fresh ground black pepper and oil.

Ingredients -
1 pound Boneless, Skinless Chicken Breast
1 Green Bell Pepper
1 Red Bell Pepper
1 Medium White or Yellow Onion, peeled and sliced
3 Large Garlic Cloves, about 1 tablespoon minced
4 ounces Reduced-Sodium Chicken Broth
2 tablespoons Soy Sauce
2 tablespoons Cornstarch
1/2 teaspoon Coarse Salt
1/2 teaspoon Fresh Ground Black Pepper
2 tablespoons Olive or Canola Oil
 
Preparation:

1. Slice the chicken thinly at a diagonal.

2. Slice the bell peppers in thin strips, discarding the seeds.

3. Whisk together the soy sauce, broth, salt, pepper and cornstarch in a bowl.

4. Heat a wok over high heat for 1 minute, add the oil let heat for 1 minute then add the chicken and garlic.

5. Cook, stirring frequently, for 2 minutes, then add the peppers and onions.

6. Cook for 2 more minutes, stirring frequently.

7. Add the broth mixture and stir constantly, bringing the mixture to a boil.

8. Serve over hot rice.

Stir-frying Equipment

You can use a Dutch oven or other heavy bottomed skillet for stir-frying and the results can be exceptional. Traditionalists prefer using a Chinese wok.
