Ginger and Lemon Chicken Stir-Fry

Peeled and grated fresh ginger and minced garlic stir-fried in hot oil with fresh sliced lemon, thinly sliced chicken breast, chicken broth, and oyster sauce. Stir-fry dish is garnished with Thai basil leaves and served hot.

Ingredients -

1 tablespoon Vegetable Oil
2 Boneless, Skinless Chicken Breasts, trimmed and thinly sliced
1 Fresh Lemon, sliced
1 (1/2-inch piece) Peeled and Grated Fresh Ginger
2 Garlic Cloves, minced
1/4 cup Oyster Sauce
1/4 cup Chicken Broth
1/2 cup Thai Basil Leaves

 
Preparation:

1. Turn the heat to high and place a large wok, heating until hot.

2. Add the vegetable oil and heat until it is just about to smoke.

3. Add the ginger and garlic and stir fry for 30 seconds.

4. Add the fresh sliced lemon and chicken and cook until the chicken is no longer pink on the inside, which takes about 2 minutes.

5. Add the chicken broth and oyster sauce and cook until the sauce begins to thicken, which takes about 2 minutes.

6. Remove the wok from the heat and stir in the basil.

7. Serve and enjoy.

Oyster sauce is an Asian condiment produced from oyster essence or extract, salt, sugar and water. The mixture is thickened and bottled for purchase.
