1. Add 2 tablespoons of oil to a large wok and heat over medium-high heat.
2. Add the onion and stir fry for 2 minutes.
3. Add the zucchini, pineapple and pea pods and stir fry for 2 more minutes.
4. Remove the contents to a plate and keep warm.
5. Add the remaining oil to the wok and add the chicken.
6. Stir fry until the chicken is cooked through, which takes about 2 or 3 minutes.
7. Return the reserved mixture to the wok and add the stir fry sauce.
8. Cook for 1 minute, stirring constantly.
9. Serve garnished with fresh pineapple wedges.
