Pineapple Chicken Stir Fry

Sliced red onion, fresh pineapple pieces, zucchini strips, pea pods and boneless chicken pieces are stir-fried until cooked through. Dish is tossed in stir-fry sauce, served hot garnished with pineapple wedges.

Ingredients -

4 teaspoons Cooking Oil
1 Medium Red Onion, halved lengthwise and sliced
1/4 Fresh Pineapple, peeled, cored, and cut into bite-size pieces
3/4 cup Zucchini cut into thin bite-size strips
3/4 cup Trimmed Fresh Pea Pods
3 Skinless, Boneless Chicken Breast Halves (12 ounces total), cut into thin bite-size strips
3 tablespoons Bottled Stir-Fry Sauce
Pineapple Wedges, for garnish

 
Preparation:

1. Add 2 tablespoons of oil to a large wok and heat over medium-high heat.

2. Add the onion and stir fry for 2 minutes.

3. Add the zucchini, pineapple and pea pods and stir fry for 2 more minutes.

4. Remove the contents to a plate and keep warm.

5. Add the remaining oil to the wok and add the chicken.

6. Stir fry until the chicken is cooked through, which takes about 2 or 3 minutes.

7. Return the reserved mixture to the wok and add the stir fry sauce.

8. Cook for 1 minute, stirring constantly.

9. Serve garnished with fresh pineapple wedges.

Countertops, cutting boards and utensils should be washed in hot soapy water immediately after preparing chicken. Cutting boards should be washed in the dishwasher if possible or washed with a solution of 1 tablespoon bleach per gallon water to ensure sanitization.

Zucchini
