Szechwan Hoisin Honey Chicken

Boneless, skinless chicken breast pieces, onion slices, green, red and yellow bell pepper strips stir-fried and tossed in sauce prepared from chicken broth, dry sherry, Hoisin sauce, honey, dark sesame oil, Asian chile sauce, and cornstarch. Dish is served hot over long grain Chinese white rice.

Ingredients -

1/4 cup Chicken Broth
1/4 cup Dry Sherry
2 tablespoons Hoisin Sauce
2 tablespoons Honey
1 tablespoon Dark Sesame Oil
2 teaspoons Asian Chili Sauce
2 teaspoons Cornstarch
1 pound Boneless, Skinless Chicken Breast, cut in 1/2-inch cubes
1 Large Yellow Onion, cut in half and sliced thin
1 Red Bell Pepper, stemmed, seeded, and cut in thin strips
1 Green Bell Pepper, stemmed, seeded, and cut in thin strips
3 tablespoons Canola Oil

 
Preparation:

1. In a small bowl, combine the first 7 ingredients and mix well.

2. Add the oil to a large wok and heat over medium-high heat.

3. Add the chicken and cook until the juices run clear.

4. Transfer to a plate and keep warm.

5. Add the onion and bell pepper and sauté until crisp tender.

6. Add the sauce and mix well.

7. Add the chicken and toss well to coat.

8. Heat until warmed through.

9. Serve over hot cooked rice.

Cooking Chicken Thoroughly

Chicken should be cooked to an internal temperature of 165 F to ensure any bacteria have been killed. Undercooked chicken is a potential safety risk and should be avoided. Properly cooked chicken will never be pink inside, and the juices will run clear when the chicken is cooked through.
