Asian Style Orange Chicken with Ginger and Garlic

Bone-in chicken breast halves coated in mixture of brown sugar, fresh orange juice concentrate, minced garlic, fresh orange zest, minced fresh ginger, sea salt and fresh ground black pepper. Chicken is roasted in hot oven until cooked through and then finished under the broiler to caramelize glaze.

Ingredients -

2 tablespoons Soy Sauce
2 tablespoons Brown Sugar
2 tablespoons Thawed Orange Juice Concentrate
2 Garlic Cloves, minced
1 teaspoon Finely Grated Orange Zest
1 teaspoon Minced Fresh Ginger
1 teaspoon Sea Salt
1/2 teaspoon Fresh Ground Black Pepper
4 (1/2 pound each) Bone-In Chicken Breast Halves with Skin

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Mix together the first 8 ingredients in a medium bowl, whisking well to combine.

3. Add the chicken and toss gently to coat thoroughly.

4. Arrange the chicken breasts into a shallow baking dish, with the skin side up.

5. Place the dish into the center of the oven and roast for 25 minutes, basting 4 times.

6. Turn the broiler on and broil the dish until the chicken is nicely golden brown.

7. Serve and enjoy.

Properly Cooked Chicken

Properly cooked chicken is moist and tender. Undercooking chicken breasts results in meat being tough. Overcooking the chicken results in the meat losing moisture and the chicken being drier. If you cook chicken with the skin on, the chicken will stay moister. Simply remove the skin after cooking and discard if you will not be consuming it.
