Barbeque Chicken Tacos

Boneless, skinless chicken breasts halves and chopped white onion simmered in barbeque sauce until chicken is cooked through. Corn tortillas are fried in hot oil to crisp, filled with hot chicken mixture and served with garnish of shredded cheese and chopped fresh cilantro.

Ingredients -

2 (8 ounces each) Boneless, Skinless Chicken Breasts
1 cup Barbeque Sauce
1/2 cup Chopped White Onion
8 Corn Tortillas
1/4 cup Chopped Fresh Cilantro
1/2 cup each Cheddar, Colby and Monterrey Jack Cheeses, mixed
1 cup Canola Oil

 
Preparation:

1. Add a few tablespoons of canola oil to a large frying pan and heat over medium heat.

2. Thinly slice the chicken into small pieces and add to the hot oil.

3. Sear the chicken for 4 minutes, then add the onions and barbeque sauce.

4. Simmer until the chicken is cooked through, which takes about 10 minutes.

5. To another medium sized pan, add the remaining canola oil and heat over high heat.

6. Fry the tortillas lightly and drain on paper towels, folding them in half to create a taco shape.

7. Fill the tacos with the chicken mixture and top with cheese and cilantro.

8. Serve and enjoy.

Moisture Loss in Chicken

Moisture loss in chicken results in dry chicken and less tender results. Avoid freezing chicken whenever possible to avoid moisture loss during thawing. When storing chicken in the refrigerator, keep it properly wrapped to avoid the chicken drying out. Cook chicken with the skin on, trapping in moisture. When the chicken has finished cooking the skin can be removed easily and discarded, if desired.

Corn Tortillas

To craft perfectly shaped tortillas very quickly, you can use a tortilla press. The metal or wood presses can be found in most specialty cooking shops. The presses are an excellent tool to create similar shape tortillas very efficiently. Alternately you can mix the tortilla dough and pat them into rounds by hand.
