1. Add a few tablespoons of canola oil to a large frying pan and heat over medium heat.
2. Thinly slice the chicken into small pieces and add to the hot oil.
3. Sear the chicken for 4 minutes, then add the onions and barbeque sauce.
4. Simmer until the chicken is cooked through, which takes about 10 minutes.
5. To another medium sized pan, add the remaining canola oil and heat over high heat.
6. Fry the tortillas lightly and drain on paper towels, folding them in half to create a taco shape.
7. Fill the tacos with the chicken mixture and top with cheese and cilantro.
8. Serve and enjoy.
