Chicken Burritos with Mexican Cheese and Tomatoes

Boneless, skinless chicken breast pieces, chopped onion, and green bell pepper strips are sautéed in canola oil in large skillet. Barbeque sauce added to skillet and chicken breast mixture is simmered until chicken is heated completely through. Shredded Mexican cheese blend is arranged down center of warmed flour tortillas and topped with chicken and vegetables. Tortillas rolled burrito style and fried in hot oil until tortillas are crisp.  Served with lime wedges, sour cream shredded lettuce and chopped tomato for garnish.

Ingredients -

1/2 pound Boneless, Skinless Chicken Breasts cut into 1/2-inch cubes
1-1/2 cups Julienned Green Bell Peppers
1 cup Chopped White or Yellow Onion
4 tablespoons Canola Oil, divided
1/2 cup Barbecue Sauce
1-1/2 cups (6 ounces) Shredded Mexican Cheese Blend
4 (10 inches) Flour Tortillas, warmed

Lime Wedges
Sour Cream
Shredded Lettuce
Rough Chopped Tomatoes

 
Preparation:

1. Add half the oil to a large skillet and heat over medium-high heat.

2. Add the chicken, green bell peppers and onion and cook until the chicken is no longer pink, which takes about 6 to 8 minutes.

3. Add the barbeque sauce and bring the mixture to a boil.

4. Turn the heat to low and allow the mixture to cook until heated through, which takes a few minutes.

5. Sprinkle the cheese down the center of the warm flour tortillas and top with some of the barbeque chicken mixture.

6. Roll them up burrito style.

7. Add the remaining oil to a large skillet and heat until hot.

8. Add the burritos and brown on all sides.

9. Serve with lime wedges, sour cream, lettuce and tomatoes if desired.

Green Bell Peppers

The most popular of the bell peppers is green in color, however if left to ripen, the peppers will turn yellow or red. Orange and purple varieties can sometimes be found in supermarkets and specialty produce stores. The sweet peppers are available year-round, but most plentiful during the summer months.
