1. Sprinkle salt and pepper on both sides of the chicken breasts.
2. Add the chicken and olive oil to a large skillet and brown until done.
3. Add the Margherita sauce, cover and simmer until the chicken is cooked through, which takes about 5 minutes.
4. Layer the sliced mozzarella on top of the chicken and allow to stand until the cheese melts.
5. Serve garnished with basil, over hot penne pasta and additional sauce.
