Chicken Margherita

Seasoned chicken breasts are sautéed in olive oil until chicken is cooked through. Margherita pasta sauce is stirred into skillet and dish is simmered to heat sauce thoroughly. Chicken is topped with fresh mozzarella slices. When cheese has melted chicken is garnished with chopped fresh basil and served with sauce over hot cooked penne pasta.

Ingredients -

4 Boneless, Skinless Chicken Breasts
Coarse Salt
Fresh Ground Black Pepper
1 tablespoon Extra Virgin Olive Oil
2 cups Margherita Pasta Sauce
4 Slices Fresh or Packaged Mozzarella Cheese
2 tablespoons Sliced Fresh Basil
Hot, Cooked Penne Pasta

 
Preparation:

1. Sprinkle salt and pepper on both sides of the chicken breasts.

2. Add the chicken and olive oil to a large skillet and brown until done.

3. Add the Margherita sauce, cover and simmer until the chicken is cooked through, which takes about 5 minutes.

4. Layer the sliced mozzarella on top of the chicken and allow to stand until the cheese melts.

5. Serve garnished with basil, over hot penne pasta and additional sauce.
