Chicken Tenders with Spicy Black Beans

Chicken breast tenders coated in mix of ground cumin, garlic powder, fresh ground black pepper, and coarse salt. Prepared chicken sautéed in olive oil until browned and cooked through. Chicken served with black beans and salsa and garnish of shredded Monterrey Jack Cheese, finely chopped fresh cilantro, and thinly sliced green onion.

Ingredients -

1 pound Chicken Breast Tenders
1 teaspoon Ground Cumin
1/2 teaspoon Garlic Powder
1/2 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Coarse Salt
1 tablespoon Extra-Virgin Olive Oil
1 cup Canned Black Beans, undrained
1/2 cup Chunky-Style Salsa
1/2 cup Shredded Reduced-Fat Monterrey Jack Cheese
3 tablespoons Finely Chopped Fresh Cilantro
3 tablespoons Thinly Sliced Green Onion

 
Preparation:

1. Rinse the chicken tenders and pat dry.

2. In a bowl, combine the next 4 ingredients and rub on both sides of the tenders.

3. Add the olive oil to a large nonstick skillet and heat over medium-high heat.

4. Add the chicken to the skillet and fry on each side until browned.

5. Turn the heat down to medium.

6. Cover and let cook for 3 minutes or until the internal temperature of the chicken is 165 degrees.

7. Remove the chicken to a plate and keep warm.

8. Add the salsa and beans and cook until hot.

9. Divide the chicken between serving plates and top with 1 quarter of the salsa mixture.

10. Serve garnished with cheese, green onion and cilantro.
