Creamy Chicken Taco Skillet

Boneless, chicken breast halves seasoned with taco seasoning and pan fried until browned and cooked through. Chicken set aside, white rice is stirred in with additional taco seasoning, water. As rice finishes, sour cream and shredded cheese are stirred in. Chicken is served with Mexican style rice.

Ingredients -

4 (6 ounces each) Boneless, Skinless Chicken Breast Halves
1 (1-1/4 ounces) packet Taco Seasoning Mix
1 tablespoon Vegetable Oil
2 cups Water
2 cups Minute White Rice, uncooked
3/4 cup Sour Cream
1 cup Shredded Mexican Blend Cheese

 
Preparation:

1. Sprinkle some of the taco seasoning on both sides of the chicken breasts halves.

2. Add the vegetable oil to a large frying pan and heat over medium-high heat.

3. Add the chicken and cook until the juices run clear, which takes about 5 minutes per side.

4. Remove the chicken to a plate and keep warm.

5. To the skillet, add the water and remaining taco seasoning and blend well.

6. Bring the mixture to a boil, occasionally stirring.

7. Add the rice, reduce the heat to low, cover and cook for 5 minutes.

8. Add the sour cream to the mixture and stir well to combine.

9. Place the reserved chicken breasts on top and sprinkle with shredded cheese.

10. Cover and cook until the cheese is melted, which takes about 2 minutes.
