Crispy Apple Chicken

Boneless, skinless chicken breasts dipped in apple butter and dredged in mixture of crushed apple chips, crushed cornflakes, all-purpose flour, and seasoning salt. Prepared chicken is sautéed in butter until crust is crisp and golden, chicken is cooked through and juices run clear.

Ingredients -

1 cup Apple Chips
1 cup Corn Flakes
2 tablespoons All-Purpose Flour, divided
1/2 teaspoon Seasoning Salt
1 pound Boneless, Skinless Chicken Breasts
2 tablespoons Apple Butter
1 tablespoon Unsalted Butter
1 tablespoon Extra Virgin Olive Oil

 
Preparation:

1. Add the apple chips and corn flakes to a food processor and pulse until crushed.

2. Add half the flour and the salt and pulse a few more times.

3. Add the chicken to a large Ziploc bag with 1 tablespoon of flour and shake well to coat.

4. Transfer the apple chip mixture to a shallow dish.

5. Coat the chicken breasts with apple butter then dredge in the corn flake mixture.

6. Add the butter and oil to a large frying pan and melt over medium heat.

7. Add the chicken and cook for 4 minutes per side or until the juices run clear.
