Fajita Pasta

Boneless, skinless chicken breast slices sautéed in hot olive oil until cooked through. Chopped onion, chopped red and yellow bell pepper are added to skillet with chicken and sautéed until crisp tender. Green chilies, salsa and minced fresh complete the dish. Chicken and vegetables served over hot cooked pasta.

Ingredients -
9 ounces Angel Hair Pasta
1 tablespoon Olive Oil
2 Boneless, Skinless Chicken Breasts
1/2 cup White or Yellow Onion
1/2 cup Red Bell Pepper
1/2 cup Yellow Bell Pepper
1 cup Green Chilies
3/4 cup Salsa
Fresh Cilantro
 
Preparation:

1. Cut the chicken into thin strips cut on the diagonal.

2. Add the chicken to a hot skillet with olive oil and cook for 5 minutes or until the chicken is cooked through.

3. Heat a pot of water to boiling.

4. Add the pasta and cook until al dente.

5. Cut the onion and peppers into bite size pieces and add to the skillet with the chicken.

6. Continue to cook over medium-high heat and add the chilies and salsa, stirring to combine.

7. Reduce the heat and mince the cilantro and add to the skillet.

8. Drain the pasta and add to a serving bowl.

9. Top with the chicken and vegetables.
