1. Cut the chicken into thin strips cut on the diagonal.
2. Add the chicken to a hot skillet with olive oil and cook for 5 minutes or until the chicken is cooked through.
3. Heat a pot of water to boiling.
4. Add the pasta and cook until al dente.
5. Cut the onion and peppers into bite size pieces and add to the skillet with the chicken.
6. Continue to cook over medium-high heat and add the chilies and salsa, stirring to combine.
7. Reduce the heat and mince the cilantro and add to the skillet.
8. Drain the pasta and add to a serving bowl.
9. Top with the chicken and vegetables. |
