Garlic Chicken Breasts

Boneless, skinless chicken breasts marinated overnight in mixture of fresh lime juice, extra-virgin olive oil, coarse salt and fresh ground black pepper. Prepared chicken arranged in baking dish and roasted in hot oven until cooked through and juices run clear.

Ingredients -

1/4 cup Fresh Lime Juice
1/4 cup Extra Virgin Olive Oil
1 tablespoon Minced Garlic
2 Boneless, Skinless Chicken Breasts
Coarse Salt
Fresh Ground Black Pepper

 
Preparation:

1. Whisk the olive oil and lime juice together in a medium bowl.

2. Add a generous amount of salt and pepper and the chicken and stir well to coat completely.

3. Cover the bowl with plastic wrap and refrigerate overnight.

4. Turn the oven to 400 degrees and preheat.

5. Remove the chicken from the bowl with tongs and throw the marinade away.

6. Place the chicken in the bottom of a shallow baking pan and sprinkle with salt and pepper.

7. Roast the chicken until the chicken is no longer pink in the middle, which takes about 25 to 30 minutes.
