Garlic Mushroom Chicken Melt

Boneless, skinless chicken breasts arranged in baking dish with mixture of garlic mushroom soup mix, diced tomatoes and extra-virgin olive oil. Chicken is roasted until cooked through, topped with shredded mozzarella cheese, and returned to oven until cheese has melted. Dish is served immediately.

Ingredients -

4 Boneless, Skinless Chicken Breast Halves
1 envelope Lipton Recipe Secrets Garlic Mushroom Soup Mix
1 (14 ounces) can Diced Tomatoes, un-drained
1 tablespoons Extra Virgin Olive Oil 
1/2 cups Mozzarella Cheese, shredded

 
Preparation:

1. Preheat the oven to 375 degrees.

2. Arrange the chicken in a 13x9-inch baking or roasting pan.

3. Blend together the soup mix, oil and tomato and pour over the chicken.

4. Bake uncovered for 25 minutes or until the internal temperature of the chicken is 170 degrees.

5. Sprinkle with mozzarella cheese and bake an additional 2 minutes or until the cheese is melted.
