Greek Chicken Saute

Boneless, skinless chicken breast halves dredged in mixture of all-purpose flour, coarse salt, and fresh ground pepper are sautéed in olive oil until cooked through. Chicken set aside. Sliced Italian frying pepper, sliced sweet onion sautéed and combined with water, grape tomatoes, minced garlic, and fresh lemon zest. Vegetable mixture is simmered until tomatoes soften. Chicken breasts are arranged on serving platter, topped with vegetable mixture and garnished with crumbled feta cheese and chopped fresh dill.

Ingredients -

2 teaspoons All-Purpose Flour
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
4 Boneless, Skinless Chicken Breast Halves
2 teaspoons Olive Oil
2 Italian Frying Peppers, sliced
1 Small Sweet Onion, sliced
1/2 cup Water
1 cup Grape Tomatoes
2 teaspoons Minced Garlic
2 teaspoons Fresh Lemon Zest
1/4 cup Crumbled Feta Cheese
3 tablespoons Chopped Fresh Dill

 
Preparation:

1. Combine the flour, salt and pepper in a shallow dish and mix well.

2. Dredge the chicken, coating thoroughly.

3. Add 1-1/2 teaspoons oil to a skillet and heat over medium heat.

4. Add the chicken and cook through, turning once.

5. Remove the chicken to a cutting board.

6. Add the remaining oil to the skillet and heat over medium-high heat.

7. Add the onions and peppers and sauté until crisp tender, which takes about 5 minutes.

8. Add all but the last 2 ingredients and sauté until the tomatoes soften, which takes about 2 minutes.

9. Serve sprinkled with feta and fresh dill.
