Herbed Lemon Chicken Breasts

Boneless, skinless chicken breasts dredged in mixture of all-purpose flour and lemon pepper seasoning. Coated chicken is sautéed in unsalted butter until both sides have browned. Chicken is arranged in casserole dish and topped with mixture of fresh lemon juice, fresh lemon zest, low-sodium chicken stock and brown sugar. Dish is roasted in the oven until chicken has finished cooking and juices run clear.

Ingredients -

1 Medium Lemon, zested, juiced
2 tablespoons Lemon Pepper Seasoning Blend
1 tablespoon Unsalted Butter
6 Boneless, Skinless Chicken Breast Halves
1/3 cup All-Purpose Flour
1 tablespoon Brown Sugar
1 cup Low Sodium Chicken Stock

 
Preparation:

1. Using clean paper towels, pat the breasts dry.

2. Add the all-purpose flour and lemon pepper seasoning to a plate and mix well.

3. Dredge the clean chicken breasts in the flour mixture.

4. Add the butter and chicken to a skillet and brown on both sides, but do not fully cook.

5. Transfer the skillet chicken to a casserole baking dish.

6. Combine the lemon zest, lemon juice, chicken stock and brown sugar and mix well.

7. Pour the lemon mixture over the top of the chicken.

8. Bake in a 375 degree oven until the chicken is fully cooked, which takes about 35 minutes.
