Maple Pecan Chicken

Boneless, skinless chicken breast pieces coated in maple syrup, dredged in a bread crumb and pecan mixture and baked golden brown.

Ingredients -
1 pound Boneless, Skinless Chicken Breast (cut into six pieces)
1/2 cup Pecan Halves
1/4 cup Plain Bread Crumbs
1 teaspoon Fresh Ground Black Pepper
1/2 cup Maple Syrup
 
Preparation:

1. Preheat oven to 350 F.

2. Line baking sheet with parchment paper.

3. Add pecan halves and bread crumbs to food processor. Pulse to combine. Pecans should be same consistency as bread crumbs.

4. Remove pecan mixture to shallow bowl.

5. Pour maple syrup into a bowl.

6. Coat chicken on both sides with maple syrup.

7. Dredge chicken in pecan mixture.

8. Lay breaded chicken on baking sheet.

9. Bake 35 minutes, or until chicken is cooked through.

A whole chicken weighing 4-6 pounds can take several days in the refrigerator to thaw. The process can be quickened by finishing the thawing process in a bath of cold water.
