Pepper Chicken

Chicken breast pieces sautéed in hot vegetable oil until browned. Sauce prepared from ketchup, light soy sauce, fresh ground black pepper, all-purpose flour, Sauce simmered with chicken, thin slices of onion, thin slices of green bell pepper, and sliced mushrooms. Dish is served hot over cooked rice.

Ingredients -

2 tablespoons Vegetable Oil
1 pound Boneless, Skinless Chicken Breasts, cut into 1 inch pieces
1/2 cup Ketchup
3 tablespoons Light Soy Sauce
1/8 teaspoon Black Pepper
2 tablespoons All-Purpose Flour
1 large White or Yellow Onion, cut into thin slices
2 Green Bell Peppers, seeded, cored and cut into thin slices
1 (4 ounces) can Sliced Mushrooms, drained
Cooked White Rice for serving

 
Preparation:

1. Add the vegetable oil to a large heavy skillet and heat to hot.

2. Add the chicken and cook for 5 minutes.

3. Whisk together 1 cup water, ketchup, soy sauce and pepper in a bowl.

4. Add the flour and mix well.

5. Remove the chicken to a cutting board.

6. Add the ketchup mixture to the skillet and bring to a boil.

7. Return the chicken to the skillet with the onion.

8. Turn the heat to low and let the mixture simmer for 20 minutes, covered.

9. Add the mushrooms and pepper and simmer for another 15 minutes.

10. Serve over hot cooked rice.
