Pepper Lime Chicken

Boneless, skinless chicken breasts broiled until cooked through, topped with pepper lime glaze featuring fresh lime zest, fresh lime juice, vegetable oil, minced garlic, fresh ground black pepper, crushed herbs, and coarse salt.

Ingredients -

2 to 2-1/2 pound Boneless, Skinless Chicken Pieces

Pepper-Lime Glaze:
1/2 teaspoon Fresh Lime Zest
1/4 cup Lime Juice
1 tablespoon Vegetable or Olive Oil
2 Garlic Cloves, minced
1 teaspoon Fresh Ground Black Pepper
1 teaspoon Dried Thyme or Basil, crushed
1/4 teaspoon Salt

 
Preparation:

1. Clean, rinse and pat the chicken dry with paper towels.

2. Prepare a broiler pan with a rack and place the chicken, skin side down.

3. Broil until lightly browned, 4 or 5 inches from the heat, which takes about 20 minutes.

4. Combine pepper lime glaze ingredients in small bowl.

5. Drizzle or brush glaze over chicken breasts and serve hot.
