Raspberry Chicken

Chicken poached in dry white wine until cooked through, set aside. Sauce prepared from cooking wine, sour cream, raspberry jam, raspberry syrup, raspberry vinegar, and fresh raspberries. Chicken served hot topped with raspberry sauce. Dish is garnished with fresh watercress.

Ingredients -

4 Boneless, Skinless Whole Chicken Breasts
1 cup Dry White Wine
2 cups Sour Cream
2 tablespoons Raspberry Jam
2 tablespoons Raspberry Syrup
1 tablespoon Raspberry Vinegar
Fresh Red Raspberries
Watercress

 
Preparation:

1. Slice the chicken into 1 inch strips on the diagonal.

2. Add the wine to a large frying pan and bring to a boil.

3. Add the chicken and cook over medium heat for 5 to 6 minutes, or until the chicken is cooked through.

4. Remove the chicken with a slotted spoon to a serving plate and keep warm.

5. Add the remaining ingredients to the same skillet and whisk until smooth.

6. Heat through, pour over the chicken and serve.
