Savory Chicken with Onion Thyme Sauce

Boneless, skinless chicken breasts dredged in mixture of all-purpose flour, coarse salt and fresh ground black pepper. Prepared chicken is sautéed in olive oil until cooked through. Thinly sliced onions and minced garlic are sautéed until onion is tender and combined with chicken broth, seasoned rice vinegar and fresh thyme leaves. Sauce is simmered until it thickens and served over chicken breasts.

Ingredients -

1/4 cup All-Purpose Flour
3/4 teaspoon Salt, divided
3/4 teaspoon Fresh Ground Black Pepper, divided
4 Boneless, Skinless Chicken Breasts
2 tablespoons Olive Oil
1 Large Onion, halved & sliced thin
3 Garlic Cloves, minced
1 cup Chicken Broth
2 tablespoons Seasoned Rice Vinegar
2 teaspoons Fresh Thyme Leaves or 1/2 teaspoon Dried Thyme

 
Preparation:

1. In a small shallow dish, combine the flour, 1/2 teaspoon salt and 1/2 teaspoon pepper and mix well.

2. Dredge the chicken in the mixture and tap off the excess.

3. Add the olive oil to a large skillet and heat over medium heat.

4. Add the chicken and brown on both sides, which takes about 10 minutes.

5. Remove the chicken to a plate and tent with foil to keep warm.

6. Add the onion and sauté until tender, which takes about 2 minutes.

7. Add the garlic and cook until fragrant.

8. Add the remaining ingredients and bring to a boil.

9. Boil for 10 minutes, stirring often, or until the sauce thickens.

10. Serve with a nice salad or over rice.
