Simmered Tuscan Chicken

Chicken breast pieces and minced garlic sautéed in olive oil are combined with diced potatoes and diced red bell pepper and simmered. Spaghetti sauce, fresh cut green beans, dried basil, coarse salt, and fresh ground black pepper are stirred in and dish is cooked over low heat until chicken is cooked through and potatoes are tender.

Ingredients -
1 pound Boneless, Skinless Chicken Breasts, cut into 1" cubes
2 Garlic Cloves, minced
2 tablespoons Olive Oil
4 Medium Potatoes, cut 1/2 cubes (about 4 cups)
1 Medium Red Bell Pepper, diced
1 (28 ounces) jar Spaghetti Sauce
1 pound Fresh Cut Green Beans
1 teaspoon Dried Basil
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Sauté the garlic and chicken in olive oil until browned.

2. Add the peppers and potatoes and cook for another 5 minutes, occasionally stirring.

3. Add the spaghetti sauce, green beans, basil, salt and pepper and bring the mixture to a boil.

4. Cover, lower the heat and simmer for 35 minutes or until the chicken is done and the potatoes are fork tender.
