Skillet Chicken with Crunchy Crust and Honey Mustard Sauce

Chicken breast tenders dredged in mixture of all-purpose flour, onion powder, garlic powder, and fresh ground black pepper, dipped in mixture of egg and milk, and dredged in mixture of crushed captain crunch cereal and cornflakes. Prepared chicken tenders sautéed in hot oil until golden brown and cooked through. Tenders served hot with sauce prepared from mayonnaise, honey, and yellow mustard.

Ingredients -

2-1/2 cups Captain Crunch Cereal
1 cup Cornflakes
1 Large Egg
1 cup Whole Milk
1 cup All-Purpose Flour
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1/2 teaspoon Fresh Ground Black Pepper
2 pounds Chicken Breast, cut in 1-oz. tenders
Peanut Oil for frying

Honey Mustard Sauce:
1/2 cup Mayonnaise
2 tablespoons Honey
1 tablespoon Prepared Mustard

 
Preparation:

1. Crush both cereals together, add to a shallow dish and set to the side.

2. Add the egg and milk to a small bowl and whisk well to combine.

3. In a separate bowl, combine the flour, onion powder, garlic powder and black pepper, mix well and set aside.

4. Dredge the chicken pieces in the seasoned flour, shaking off the excess.

5. Dip them in the egg wash and then into the cereal mixture, coating well.

6. Add the oil to a large cast iron skillet and heat the oil to 325 degrees.

7. Cook the chicken in small batches until golden brown, which takes about 4 to 5 minutes.

8. Drain on paper towels.

9. In a small bowl, combine the mayonnaise, honey and mustard and mix well.

10. Serve the chicken with the mustard dipping sauce.
