Skillet Chicken with Garlic, Ginger and Crushed Red Pepper
Boneless chicken breast pieces sautéed in olive oil until browned and set aside. Crushed garlic, ground ginger, crushed red pepper flakes, apple juice, light brown sugar, ketchup, cider vinegar,
water and soy sauce combined in skillet and simmered to thickened mixture. Chicken returned to skillet, heated through and served over hot rice.
Ingredients -
2 pounds Boneless Chicken Breasts, cut into bite-size pieces
1 -2 tablespoon Olive Oil
1 Garlic Clove, crushed
1/4 teaspoon Ginger
3/4 teaspoon Crushed Red Pepper Flakes
1/4 cup Apple Juice
1/3 cup Light Brown Sugar
2 tablespoons Ketchup
1 tablespoon Cider Vinegar
1/2 cup Water
1/3 cup Soy Sauce
Preparation:
1. Add the olive oil to a large skillet and heat to hot.
2. Add the chicken and brown until cooked through.
3. Remove the chicken to a plate and set aside.
4. Add the remaining ingredients to the skillet and heat over medium heat until well combined.
5. Return the chicken to the pan, increase the heat to high, and bring the mixture to a boil.
