Tex-Mex Chicken Saute

Diced chicken tossed with vegetable oil, and southwest seasoning mix. Prepared chicken pieces sautéed in vegetable oil. Diced tomatoes and tomato paste stirred in with chicken and mixture is simmered. Sautéed sliced onion, and sliced onion combined with chopped garlic, oregano, and seasoning mix. Cooked brown rice combined with vegetables, chicken, fresh lime juice, and fresh lime zest. Dish is served hot.

Ingredients -
1 tablespoonTomato Paste
Chopped Garlic and Oregano, to taste
3 cups Cooked Brown Rice
2 cups Diced Tomatoes
1 Fresh Lime, zested, juiced
2 Red and/or Green Bell Peppers, seeded, sliced
2 White or Yellow Onions, peeled, sliced
3 tablespoons Vegetable Oil
1-1/2 teaspoon Southwest Seasoning Mix
1 pound Boneless Skinless Chicken Breasts, diced
 
Preparation:

1. Combine 2 tablespoons oil, 1 teaspoon Southwest seasoning and diced chicken in a bowl and mix well.

2. Sauté until browned which takes about 2 to 4 minutes.

3. Add the tomatoes and tomato paste and cook for another 2 minutes.

4. Remove the mixture to a bowl and set aside.

5. Add the onions and peppers to the same skillet with the remaining oil and sauté for 4 minutes or until the onions are tender.

6. 6. Stir in the chopped garlic and oregano, remaining seasoning mix and cook for 1 minute, stirring often.

7. Add the rice, reserved chicken mixture, 1 tablespoon lime juice and 1/4 teaspoon lime zest and cook for 1 more minute or until heated through.
