Thai Chicken with Spicy Peanut Sauce

Boneless chicken breasts broiled until cooked through, sliced thin, and topped with thinly sliced red bell pepper, thinly sliced green onion, snow peas, and sauce prepared from reduced-sodium soy sauce, fresh lemon juice, cornstarch, garlic powder, red pepper flakes, and smooth peanut butter.

Ingredients -

Sauce:
2 tablespoons Reduced-Sodium Soy Sauce
1 tablespoon Fresh Lemon Juice
1 teaspoon Cornstarch
1/2 teaspoon Garlic Powder
1/4 teaspoon Red Pepper Flakes
1/4 cup Smooth Peanut Butter

Chicken:
2 Large Boneless, Skinless Chicken Breasts, cut in half lengthwise
1/8 teaspoon Sea Salt
1/8 teaspoon Fresh Ground Black Pepper
2 cups Cooked White Rice
1 Small Red Sweet Pepper, cored, seeded and thinly sliced
2 Green Onions, trimmed and thinly sliced
1/2 pound Steamed Snow Peas

 
Preparation:
Sauce:

1. Combine the soy sauce, lemon juice, cornstarch, garlic powder and red pepper flakes in a bowl and whisk well.

2. Add the peanut butter and 1/2 cup boiling water to a saucepan and whisk well.

3. Add the soy sauce mixture and bring the pan to a gentle boil and cook until the mixture thickens.

4. Remove the pan from the heat and set aside.

Chicken:

1. Preheat the broiler and spray the broiler pan with nonstick cooking spray.

2. Heat broiler and spray broiler pan with cooking spray.

3. Sprinkle both sides of the chicken with salt and pepper.

4. Place on the broiler pan and broil for 3 minutes per side or until the chicken is cooked through.

5. Transfer the chicken to a cutting board and cut into slices.

6. Serve with the peanut sauce and garnished with green onion and red peppers and snow peas.
