Spicy Oven Fried Chicken

Marinade prepared from buttermilk, hot pepper sauce, Dijon mustard, minced garlic, fresh ground black pepper, and coarse salt. Boneless, skinless chicken breasts soaked in marinade for several hours. Marinated chicken breasts dredged in mixture of plain bread crumbs, Parmesan cheese, all-purpose flour, dried thyme, paprika, cayenne pepper, remaining salt, and olive oil. Prepared chicken arranged on baking rack and oven roasted until crispy and golden.

Ingredients -

3/4 cup Buttermilk
1 tablespoon Hot Pepper Sauce
1 tablespoon Dijon Mustard
2 Garlic Cloves, minced
1/2 teaspoon Fresh Ground Black Pepper
2 teaspoons Coarse Salt
4 Boneless, Skinless Chicken Breasts
1 cup Plain Bread Crumbs
1/4 cup Grated Fresh Parmesan Cheese
2 tablespoons All-Purpose Flour
2 teaspoons Dried Thyme
1/2 teaspoon Paprika
1/2 teaspoon Cayenne Pepper
3 tablespoons Olive Oil

 
Preparation:

1. Add buttermilk, hot pepper sauce, Dijon mustard, minced garlic, pepper, and 1-teaspoon salt to large bowl.

2. Add chicken breasts to bowl. Toss to coat.

3. Cover bowl with plastic wrap and marinate in refrigerator for 4 hours.

4. Add bread crumbs, Parmesan cheese, all-purpose flour, dried thyme, paprika, cayenne pepper, remaining salt, and 2-tablespoons olive oil to large bowl. Stir to combine.

5. Line baking sheet with foil. Place baking rack on foil lined baking sheet.

6. Remove chicken from marinade, dredge in bread crumb mixture. Coat evenly on both sides.

7. Place chicken on baking rack. Allow chicken to sit on rack 20 minutes.

8. Preheat oven to 400 F.

9. Bake 30-40, or until crispy, golden and baked through.
