Apple Salsa with Chicken

Grilled chicken is basted with a mixture of white wine, apple juice, fresh lime zest, coarse salt and fresh ground black pepper. Finished dish is served with apple salsa prepared from chopped apples, chopped jalapeno pepper, diced onion, fresh lime juice, coarse salt and fresh ground black pepper.

Ingredients -
2 cups Chopped Cored Gala Apples
1 Jalapeno Pepper, seeded and chopped
1/2 cup Onion, chopped
1/4 cup Lime Juice
Sea Salt to taste
Fresh Ground Black Pepper to taste
1/4 cup Dry White Wine
1/4 cup Apple Juice
1/2 teaspoon Lime Zest, grated
2 Whole Boneless Skinless Chicken Breasts
 
Preparation:

1. In medium bowl, combine the apples, jalapeno pepper, onion, lime juice, salt and pepper to taste.

2. Cover and set aside while preparing the chicken.

3. In a large bowl, combine white wine, apple juice, lime zest, 1/2 teaspoon salt and 1/8 teaspoon pepper.

4. Add the chicken and turn to coat with the mixture.

5. Cover and refrigerate for 30 to 40 minutes.

6. Heat the grill.

7. Drain and discard the chicken marinade.

8. Grill chicken until cooked through.

9. Serve with apple salsa.

Grilling Chicken
