Grilled Lemon Chicken with Greek Salad

Chicken breasts seasoned with garlic, fresh lemon zest, fresh lemon juice, olive oil and coarse salt. Prepared chicken is grilled over medium heat until cooked through. Greek style salad prepared from salad greens, crumbled feta cheese, chopped vine-ripened tomatoes, and thinly sliced white onion tossed with vinaigrette featuring garlic, balsamic vinegar, olive oil, and coarse salt.

Ingredients -

4 cups Salad Greens
1/2 cup Crumbled Feta Cheese
1 tablespoon Balsamic Vinegar
Coarse Salt
Fresh Ground Black Pepper
Zest and Juice of 1 Fresh Lemon
1/2 White or Yellow Onion, thinly sliced
2 Vine-Ripened Tomatoes, cored, chopped
4 Chicken Breasts, Skin-On and Bone-In
2 tablespoons Olive or Vegetable Oil
4 Garlic Cloves, (1 clove finely chopped)

 
Preparation:

1. Preheat a BBQ grill over medium-high heat.

2. Puree 3 garlic cloves, lemon peel, 1 teaspoon lemon juice, 1 teaspoon oil and 1 teaspoon salt in a food processor.

3. Loosen the chicken skins on the breasts and spread the garlic mixture underneath the skin.

4. Drizzle the bottom sides of the chicken with 1 tablespoon of oil.

5. Sprinkle salt and pepper all over.

6. Arrange the chicken on the grill, skin side down, and grill until grill marks appear.

7. Flip the chicken over and grill until cooked through.

8. Transfer the chicken to a cutting board, drizzle lemon juice over the top and let sit for 10 minutes.

9. Whisk together the garlic, vinegar and remaining oil, season with salt and pepper in a bowl.

10. Add the cheese, tomato, onion and greens and toss well.

11. Season with salt and pepper to taste.

12. Serve the salad with the chicken.

Balsamic vinegar, like olive oil is available in different grades and qualities. Authentic balsamic vinegar is produced in Italy in the in Modena and Reggio Emilia regions. The highest quality is produced made from a reduction of pressed Trebbiano and Lambrusco grapes.

Preparing Your Grill for Use
