Even Cooking Times

Sometimes with large boneless chicken breasts, a more consistent and faster cooking time can be achieved if they are placed between wax paper and using the flat side of a cleaver or a meat mallet, pounded down to a slightly thinner piece of chicken. Not too thin, or they can become fry when cooked.

Chicken Breast Recipe Tip
Meat on the Grill

Use tongs to turn meats. Avoid the temptation of using a fork and piercing the meats to run. Piercing allows the natural juices to escape. Once your meat has been fully cooked, remove the meat to a clean serving platter in a single layer and allow the meat to rest for several minutes so the juices can redistribute. If you cut mea to soon after cooking, the juices will run all over the plate.
