Italian Marinated Chicken

Boneless, skinless chicken breast halves marinated in mixture of herb and garlic marinade with lemon juice, finely chopped white onion, fresh lemon juices and seasoned pepper. Prepared chicken is grilled over hot coals until cooked through.

Ingredients -

1 (8 ounces) bottle Herb and Garlic Marinade with Lemon Juice
2 tablespoons Finely Chopped White Onion
2 tablespoons Fresh Lemon Juice
1/4 teaspoon Seasoned Pepper
6 Boneless Skinless Chicken Breast Halves, about 1-1/2 pounds

 
Preparation:

1. Add the marinade, white onion, lemon juice and pepper to a large Ziploc bag, seal and shake well to mix.

2. Add the chicken to the bag and toss well to coat.

3. Place in a large bowl and refrigerate overnight, tossing often to coat the chicken.

4. Remove the chicken from the bag and discard the marinade.

5. Grill the chicken until the center is no longer pink, which takes about 12 to 15 minutes.

6. Serve with salad or pasta.

7. Great used as leftovers for sandwiches.

Finely Chopped White Onion

White onion, or yellow onion, or red onion is perfect for this recipe. White onions are called storage onions for their ability to last months after harvesting without going bad. Store white onions in their original papery skins, uncut, at room temperature in an open container such as a bowl for several months. Once cut, the onion needs to be stored, wrapped loosely in plastic in the produce section of your refrigerator.
