Italian-Style Grilled Chicken

Boneless chicken breasts dipped in warmed mixture of olive oil, fresh lemon juice, Italian seasoning, garlic salt, and fresh ground black pepper.

Ingredients -

3 tablespoons Olive Oil
1 tablespoon Lemon Juice
1 tablespoon Italian Seasoning
1 teaspoon Garlic Salt
1/4 teaspoon Fresh Ground Black Pepper
4 Boneless, Skinless Chicken Breasts

 
Preparation:

1. Spray a grill pan with olive oil cooking spray and heat over medium-high heat.

2. Whisk together the first 5 ingredients in a microwavable bowl.

3. Heat for 1 minute in the microwave on high.

4. Dip the chicken breasts in the bowl and coat evenly with the oil.

5. Grill for 8 minutes per side, or until the internal temperature of the chicken reaches 165 degrees.

6. Let rest for 5 minutes then slice and serve.

Regular olive oil has a lighter, less fruity, less olive taste than extra-virgin or virgin olive oil. Most supermarkets carry a wide variety of olive oils, but the best oils are not typically found in the big markets, they are found in specialty food stores.

Direct Grilling Method

Direct grilling requires placing food items directly over the hot coals or gas flames to quickly cook foods. This is the preferred method for thinner foods like vegetables, fish filets, boneless chicken breasts, steaks, chops, and hamburgers. For larger thicker items like roasts, briskets, and tenderloins, the items are started over hot coals to sear, and then moved to an area not directly above high heat and cooked like in an oven.
