Lemon Chicken Kabobs with Honey

Chicken breast pieces wrapped in sage leaves and arranged on skewers with lemon wedges. Chicken kabobs grilled over hot coals, basted with sauce prepared from extra-virgin olive oil, fresh lemon juice, kosher salt, and fresh ground black pepper.

Ingredients -

2 pounds Boneless Skinless Chicken Breast Halves
4 Fresh Lemons, sliced into 1/2" wedges
24 (8-inch) Wooden Skewers
2 tablespoons Extra-Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
1/2 teaspoon Kosher Salt
Fresh Ground Black Pepper
24 Sage Leaves
2 tablespoons Honey
6 tablespoons Pine Nuts, toasted

 
Preparation:

1. Preheat a grill pan over medium-high heat.

2. Cut the chicken into 1-inch chunks.

3. Wrap the chicken pieces in sage leaves.

4. Thread the chicken and lemon onto the skewers alternately.

5. In a small bowl, combine the oil, lemon juice, salt and pepper and mix well.

6. Brush the skewers with the mixture.

7. Grill for 7 minutes per side or until the center is no longer pink.

8. Brush the cooked kabobs with honey.

9. Crush the pine nuts and sprinkle over the top.

To give your pine nuts a rich, roasted flavor, dark brown color, and crispy texture, toast them in a skillet on the stovetop. Add pine nuts to a dry skillet in single layer.
