Pesto Pasta with Grilled Chicken

Chicken breast cutlets brushed with olive oil and seasoned with coarse salt and fresh ground black pepper. Prepared chicken cutlets are grilled, rested, sliced and tossed with cooked pasta, roasted red peppers, and grape tomato halves. Chicken pasta dish served hot.

Ingredients -
1 pound Cavatappi Pasta
1 (12 ounces) Chicken Breast Cutlets
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1 (6 ounces) container Basil or Cilantro Pesto
1 cup jarred Roasted Red Peppers, drained, cut in strips
1 cup Halved Grape Tomatoes
 
Preparation:

1. Cook the pasta in a large pot of slightly salted boiling water and cook until al dente.

2. Drain, reserving 1 cup of cooking water.

3. Coat the chicken with olive oil and sprinkle generously with salt and pepper.

4. Add to a hot stovetop grill pan and grill for 5 minutes, or until cooked through.

5. Cut the chicken into thin strips.

6. Add the chicken to the pasta along with the pesto, peppers, tomatoes and 1/2 cup pasta cooking water.

7. Toss to coat and serve.

Cooking with Charcoal

To achieve different heat levels with a charcoal grill, when the coals are hot spread them into three levels around the grill and leave a fourth area without coals. This gives you the opportunity to cook different foods at different temperatures, and to remove foods cooking too quickly to areas of the grill that are not quite as hot. The open area can be used for placing items that have completed cooking until they can be removed.
