Chicken Primavera

Chicken breast strips sautéed in oil until browned combined with dried basil leaves, chopped white onion, peas, carrot strips, broccoli florets, and chicken broth. Mixture is brought to a boil, brown rice is stirred in and dish is simmered until rice has softened. Dish served hot with grated fresh parmesan cheese as garnish.

Ingredients -

1/4 cup Grated Fresh Parmesan Cheese
1/2 teaspoon Dried Basil Leaves
1 Small White or Yellow Onion, chopped
1 cup thawed Frozen Peas
3/4 pound Boneless, Skinless Chicken Breasts, cut into strips
1-1/2 cups Brown Rice, uncooked
1 dash Pepper
1 (14.5 ounces) can Chicken Broth
1 Carrot, cut into julienne strips
1 cup Broccoli Florets
1 tablespoon Cooking Oil

 
Preparation:

1. Add the oil and chicken to a skillet and brown until done.

2. Add the vegetables and cook until crisp tender.

3. Add the chicken broth, basil and pepper and bring to a boil.

4. Add the rice and stir well, returning the mixture to a boil.

5. Cover, lower the heat and simmer for 5 minutes.

6. Let stand for 5 minutes, stir in the cheese and serve.
