1. In a shallow bowl, combine the flour, 1 teaspoon salad dressing mix and black pepper.
2. Dredge the chicken until evenly coated.
3. Add 1 tablespoon of oil to a large skillet and heat to hot.
4. Add the chicken and brown for about 5 minutes, or until the chicken temperature is 165 degrees.
5. Remove the chicken to a plate and keep warm.
6. Add the remaining oil to the skillet and add the peppers and onion.
7. Sauté until lightly browned, which takes about 3 minutes.
8. Add the remaining salad dressing mix, cauliflower and water.
9. Bring the mixture to a boil, reduce the heat, cover and simmer until the cauliflower is tender, which takes about 3 minutes.
10. Add the chicken back to the skillet and sprinkle with the parmesan cheese.
11. Cover and cook until the cheese has melted. |
