Greek Chicken Bake

Boneless, skinless chicken breasts seasoned with Greek seasoning and browned in hot oil. Chicken is transferred to baking dish, topped with vine-ripened tomato slices, crumbled feta cheese, and toasted pine nuts and baked until tomatoes have heated through and cheese has melted.

Ingredients -
4 Boneless, Skinless, Chicken Breasts, pounded to uniform thickness
1 tablespoon Greek Seasoning
1 or 2 Vine-Ripened Tomatoes, sliced
1/4 cup Crumbled Feta Cheese
1 tablespoon Toasted Pine Nuts
 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Sprinkle the Greek seasoning evenly over the chicken breasts.

3. Add the chicken to a skillet that is lightly oiled over medium-high heat, and brown 3 to 5 minutes per side.

4. Transfer the chicken to a baking pan and top with tomato slices and sprinkle with pine nuts and feta.

5. Bake until heated through, which takes about 10 minutes.
