Peanut Chicken Breasts

Chicken breasts topped with mixture of peanut butter, chopped peanuts, soy sauce, minced onion, minced parsley, crushed garlic, hot pepper sauce, and ground ginger. Breasts are folded, secured, arranged in slow cooker and topped with sauce prepared from soy sauce, honey, melted butter, and chicken broth. Chicken is slow cooked on low for 4 to 5 hours, removed and sauce is cooked further and thickened with cornstarch.

Ingredients -

1/4 cup Peanut Butter
2 tablespoons Chopped Peanuts
2 tablespoons Soy Sauce
1 tablespoon Minced Onions
1 tablespoon Minced Parsley
1 Garlic Clove, crushed
1 dash Hot Pepper Sauce
1/8 teaspoon Ground Ginger
4 Boneless, Skinless Chicken Breasts
2 tablespoons Soy Sauce
2 tablespoons Honey
1 tablespoon Melted Butter
1 (10-1/2 ounces) Chicken Broth
1 tablespoon Cornstarch

 
Preparation:

1. In a bowl, combine the first 8 ingredients and blend well.

2. Spread the mixture onto the inside of the chicken breasts.

3. Fold the chicken breast in half and secure closed with a toothpick.

4. Place them in a slow cooker.

5. Combine the remaining 2 tablespoon soy sauce with the honey, butter, and chicken broth and pour the mixture over the chicken.

6. Cover and cook for 4 to 5 hours on Low.

7. Remove the chicken from the slow cooker to a cutting board and increase the heat to High.

8. Dissolve the cornstarch in a small amount of cold water and stir it into the sauce.

9. Cook on high for about 15 minutes.

10. Spoon sauce on chicken and serve.

Store Chicken in Airtight Packaging

Store chicken wrapped securely in original packaging when possible, or rewrap in airtight packaging. Chicken wrapped tightly cannot leak and potentially contaminate other foods with harmful bacteria and chicken exposed to air can dry out and will not be tender when cooked.
