Slow Cooker Chicken with Fresh Herbs

Leek slices arranged in slow cooker and topped with boneless, skinless chicken breast halves, corn kernels, shredded carrot, and mixture of coarsely chopped tomatoes chopped fresh oregano, chopped fresh thyme, crushed garlic, sea salt and fresh ground black pepper. Dish is slow cooked on low heat for 5 hours or until chicken is cooked through and tender. Chicken served hot with cooked rice.

Ingredients -

2 Leeks, sliced and rinsed
6 Boneless Skinless Chicken Breast Halves
4 Ears of Corn, kernels removed
1 Large Carrot, shredded
2 Tomatoes, coarsely chopped
2 teaspoons Chopped Fresh Oregano
1 teaspoon Chopped Fresh Thyme
1/2 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Black Pepper
1 Garlic Clove, crushed

 
Preparation:

1. Arrange the sliced leeks into the crock pot and top with the chicken breasts.

2. Sprinkle the corn on top followed by the carrots.

3. In a small bowl, mix together the oregano, thyme, garlic, salt, pepper and tomatoes.

4. Pour the mixture over the top of the carrots.

5. Cover and cook until the chicken is cooked through and tender, which takes about 5 hours on LOW.

6. Serve with hot cooked rice.
