Boneless, skinless chicken breast halves, unsalted butter, fresh lemon juice, dry sherry, fresh mushroom slices, coarse salt and fresh ground black pepper arranged in slow cooker. Dish is cooked on
low for 6 to 8 hours. Cornstarch mixture and green seedless grapes added near end of cooking. Hot chicken dish served over hot cooked rice.
Ingredients -
4 to 6 Boneless, Skinless Chicken Breast Halves
1 tablespoon Unsalted Butter
2 tablespoons Fresh Lemon Juice
1 tablespoon Dry Sherry or White Wine
8-12 ounces Fresh Mushrooms, sliced
Coarse Salt to taste
Fresh Ground Black Pepper to taste
1 tablespoon Cornstarch mixed with 2 tablespoons Water
1 cup Green Seedless Grapes
Preparation:
1. Add the first 7 ingredients to a crockpot, stir, cover and cook for 6 to 8 hours on LOW.
2. 45 minutes before it is finished cooking, stir in the cornstarch mixture and grapes.
3. Serve over hot cooked rice.
